Menu Plan Monday ~ October 12, 2008 – October 18,2008

Okay, so my plan really starts on Sunday, so it really should be called “Menu Plan Sunday”. It just sounds so much better when you say “Menu Plan Monday”. Don’t you think? Whatever. Hockey is ramping up, fall is here, the busy season is among us. This usually means Mom runs around like a chicken with her head cut off. Jon had his first set of 2 scrimmages this morning beginning at 7:40 AM. Yes, I said AM. Yes, it is Sunday. 7:40 is actually not early when you are talking about hockey and ice time schedules. You want early? How about having to be at the rink at 5:30 AM? Thank goodness the rink is 5 minutes from our house and that is where we usually play or have practice.

Jon goes Wednesday morning to get this current cast off. Thank God. If you have any idea how bad hockey equipment smells, then you know what his cast smells like. No, I am not getting my nose up real close like and smelling it. I can smell it from the other side of the room. Okay, so it isn’t that bad. But, if you sit close enough to him on the couch you can detect an odd odor coming from his area. Hopefully he won’t have to get a new cast. That will all really depend on what the x-rays show. At the very least, if he does have to get a new cast, at least it won’t stink right away. Give him a few weeks to stink it up really good.

Somehow this chatter isn’t getting me any closer to my menu plan. Sorry. The 2 glasses of Cabernet I had probably aren’t helping matters. They did help me relax. 🙂 So, simple is my theme this week. No complicated or “new” menu items. Can’t handle it this week. Will I bake? Proabably b/c I have to get my sweet fix and I ran out of my Trader Joe’s Chocolate Meringue Cookies and TJ’s is too far away. Also, my Edy’s Slow-Churned Pumpkin Ice Cream is almost gone. Yeah, I could get more. Wal-Mart up the street carries it. Do I really need it? Ask me tomorrow. Today my sweet treat was a Heath Bar. YUM! I haven’t had one since last Halloween. I had the full-size baby too! I considered having half after lunch and then half after dinner and then reasoned with myself that I deserved the whole thing (went to the gym this AM) and that if I ate all the calories right then after lunch, I had a better chance of burning them off the rest of the day. Like my reasoning? Works for me.

Here we go:

Sunday ~ Burgers (with mushroom, bacon & cheddar), sweet potato fries, broccoli & salad

Monday ~ Grilled Garlic & Dill Salmon, brown rice or quinoa, roasted brussel sprouts for moi, mixed veggies for the picky ones

Tuesday ~ Grilled BBQ Chicken Breasts, spaghetti squash, sauteed snow peas in sesame oil & salad

Wednesday ~ out with Inlaws for FIL’s b-day

Thursday ~ Apricot Glazed Pork Loin, Garlic Mashed Potatoes, Roasted Brussel Sprouts & Salad

Friday ~ Homemade Pizza with Fenster’s Crust (topped with veggies for me & pepperoni for the kids & DH), steamed carrots & salad.

Saturday ~ Sweet & Sour Chicken with broccoli & brown rice.

Menu Plan Monday

This week I sat down on Sunday to plan out my menu for the week and put some simple things on there. Aaron’s b-day is on Thursday and we are going out to eat with his parents at The Fish Market. Wednesday night is Hannah’s skating class and we will grab a bite to eat at Cheeseburger in Paradise afterwards. And Friday is the dreaded tooth extraction day, so there will be soft foods for me after that for a while. Hopefully just a couple of days, but we shall see. I didn’t really have a theme or key ingredient this week, I was just going off of what I had in my freezer and what would work for us after my tooth surgery.

Sunday ~ Joan’s GF Great Bakes Pizza, salad & steamed broccoli. We ended up going to Cheeseburger in Paradise due to the power outage

Monday ~ Salmon, brown jasmine rice and steamed green beans (This will be brought to my Dad’s house and cooked due to the power still being out).

Tuesday ~ Filet (if it survives the power outage..YIKES!), baked potatoes, steamed veggies and salad. Now Spaghetti & Meat Sauce, Steamed Green Beans, Salad & Foccacia Bread. Filet is at a friend’s house in her freezer. 🙂

Wednesday ~ Cheeseburger in Paradise

Thursday ~ Fish Market for Aaron’s birthday

Friday ~ Homemade Macaroni & Cheese (if the power is still out, just shoot me), baked beans and soft veggies of some sort. Maybe some canned peas…gross normally, but the kids like them and they will be easy for Mommy to chew.

Saturday ~ Mexican Pizzas or Tacos for the kids, I will probably have refried beans a little meat, cheese and Mexican Rice.

The power is now back on and that makes me all warm & fuzzy inside. I hope to bake a Lemon Bundt Cake and some Meringue Cookies this week, in addition to some Cinnamon Rolls. YUM!! We shall see what I get done.

Menu Plan ~ August 31, 2008 ~ September 6, 2008

This past week we were pretty good and only abandoned my menu plan and went out to eat 1 night and that was last night for sushi. YUM!! It was a great dinner. We went to Molly Woo’s again. The food took forever to come out, so the manager came over with a couple of bowls of soup, one wonton, one miso something or other. I thanked him and let him know that while I appreciated the token of appreciation for our patience, we could not eat the soup because we had to eat gluten-free. He said “Oh, you have Celiac, okay.” First, I was shocked that he put 2 & 2 together; I had just said “gluten-free” and he said “Celiac”. Then he offered to buy us dessert on the house. Again, I said I didn’t think there was anything we could have. He suggested the lemon sorbet, I suggested that they could buy me a glass of Pinot Noir and call it even. 😉 It was a nice dinner.

So this week’s menu. Nothing too complicated this week. I have a busy week watching kids (2 others, age 13 months and 17 months, in addition to my own). I am starting to pull out some of my fall cooking recipes & dinner plans now that we are going into September. Time to start making pumpkin bread, pumpkin cookies, pumpkin pie….can you tell I love pumpkin??? The baking extravaganza will begin over the next few weeks. I will make sure to share recipes. On to the menu for this week:

Sunday ~ Homemade pizza (see below for recipe/method I use) and broccoli slaw (see recipe below). Take home Cold Stone quarts (Peanut Butter Perfection and Shock-A-Cone (not GF)).

Monday ~ Breakfast for dinner ~ omelets & scrambled eggs, bacon, fried potatoes, toast (Pamela’s bread) & fresh fruit

Tuesday ~ Chicken Tenders (from last week that got bumped), sweet potato fries and steamed broccoli

Wednesday ~ Cheeseburger In Paradise after ice skating lessons.

Thursday ~ Marinated Spicy Pork Chops (recipe & pics to follow later in the week), steamed brown rice and green beans.

Friday ~ Crockpot Pot Roast with potatoes & carrots (a fall favorite).

Saturday ~ Burgers on the grill topped with cheese on lettuce buns, baked potatoes & salad.

Here is what I do for my pizza. I follow the recipe on the side of Pamela’s Wheat Free Bread Mix for the pizza crust. I add in basil & oregano to the dough. I dust the pans with cornmeal. After the dough rises for an hour, I brush with EVOO and bake for 10 minutes. Then I top with Prego 3 Cheese Marinara Sauce, mozzerella, Hormel Turkey Pepperoni. I topped mine with some veggies too…tomatoes, spinach, mushrooms. Sometimes I will add zucchini or peppers too. I then baked for another 15-20 minutes. YUM!!! The kids raved about it!! Here is my plate, with the broccoli slaw (recipe to follow):

Broccoli Slaw

1 Bag of Broccoli Slaw (found in produce section)
1/2 cup mayonnaise (I use Helman’s Canola, it is half the fat & calories of normal mayo)
1/4 cup brown sugar
1/2 TBSP white vinegar

Mix all ingedients together and then chill for an hour or so before serving. The kids loved this!! I expected them to complain and reject it immediately, but they didn’t. Must have been the sugar in the dressing!
