Weekly Menu Plan – Thanksgiving Week

Can you believe it is Thanksgiving already?  Where did this year go?  Short week for the kids…no school Weds – Fri.  Little do they know that they are hopefully getting their H1N1 vaccines on Wednesday.  That will make them really, really happy.  😉 

We are hosting Thanksgiving dinner again this year.  I love to host.  I love to roast the turkey and make all the trimmings to go along with it.  If you are unsure about which turkeys are gluten-free, please check out my Examiner post for more info.  Also, Butterball’s gravy packet is now gluten-free!  How exciting!  Here is my menu plan for turkey day:

My favorite is the cornbread stuffing and the pumpkin pie.  I love my Grandmother’s pumpkin pie recipe!  It is the best!

Here is the rest of the plan:

Sunday- Rotisserie Chicken, Roasted Klondike Potatoes (white, red & purple), steamed green beans & salad

Monday – Thai Chile Salmon, Brown Rice Couscous, Roasted Asparagus & Salad

Tuesday- Spaghetti, roasted veggies & salad

Wednesday – Burgers, sweet potato fries & salad

Thursday – Feast

Friday – Leftovers or Nachos & salad

Saturday – Leftovers or breakfast for dinner

  4. Catholic Potatoes? Are other denominations allowed to eat those too? 😉

    • LOL!! Sure!! 🙂 I have no idea why they are called that. My Grandma started making them years ago and they are easy to make ahead & then toss in the oven. Recipe will be up next week. 🙂

      I hope to get the potatoes recipe up next week. It is basically mashed potatoes with cream cheese, salt, pepper, garlic powder & cheddar cheese all mixed together & then baked like that. They are soooooo good! Not a healthy or low-cal dish, but perfect for a Holiday splurge. We do use low-fat cream cheese & cheddar to cut back on some of the fat & calories, though.

      The brown rice couscous is made by Lundberg. A friend sent me a package, but after she did, I saw it in my local health food store for the first time. We just had it tonight and it was very good.

    Have you ever heard of shelf milk? If so, can you use it in a baking recipe?

      Are you talking about dry, powdered milk? I have never used it as a sub for milk in a recipe. I have used it in a recipe that called for it, though. Sorry I can’t be of more help.

    • I either saw them on another blog & sent them an email or they contacted me. I think they contacted me. I love their bread! Review to come this week. 🙂
